After a morning spent foraging through the fields at Conscious Ground, May taught us how to make this gorgeous medicinal and tasty salad.
The farm here engages in regenerative farming practices, which include a broad range of techniques to restore vitality to the soil. The short story is, regenerative farming is what’s going to save our food systems, and you’ll be hearing a lot more about in the coming years.
This holistic method encourages beneficial, medicinal and culinary ‘weeds’ to grow between the rows and among the plants. At Conscious Ground these weeds are sustainably harvested every day to provide food for the Harvest food box, and lunch for the hard working farm team.
We foraged amazing edibles like gotu kola, dandelion, Brazilian spinach, and nasturtiums growing wild in the undergrowth.
These plants support the biodiversity of this complex system. This is an ecosystem in which everything supports every other thing, and natural forces are allowed to play out, for the benefit of everyone.
Take some of these gifts from the field, add our activated nuts & seeds, some fresh citrus, and a zingy dressing, and you’ve got a bowl of goodness to brighten any day.
- 4 cups of wild foraged medicinal greens (or any available salad greens)
- 1 pink grapefruit
- 1 orange
- 1 lemon or lime
- Mindful Foods Activated Nuts & seeds
- ¼ cup olive oil
- Juice of 1-2 limes
- Salt & pepper to taste
Peel grapefruit, orange and lemon/lime and slice
Assemble washed greens with sliced citrus
Scatter with activated nuts & seeds
Whisk dressing ingredients together in a small bowl, or shake in a jar, then toss dressing through the salad
Garnish with your choice of edible flowers, hemp seeds, sesame seeds, or activated nuts
